  • 4 tablespoons Greek yogurt

  • 1 tablespoon minced garlic
  • Juice of 1 lemon
  • 2 teaspoons dried oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon thyme
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • Cooked orzo or brown rice
  • Diced cucumber
  • Quartered cherry tomatoes
  • Kalamata or black olives
  • Crumbled feta cheese
  • Diced red onion
  • Parsley and/or dill
  • Lemon wedges
  • Tzatziki sauce
  • Optional: pita bread or pita crackers

Instructions

  1. In a large mixing bowl, combine Greek yogurt, parsley, olive oil, garlic, lemon juice, oregano, paprika, thyme, cumin, salt, and pepper to create the marinade.
  2. Add diced chicken to the marinade; toss to coat evenly. Marinate for at least 30 minutes (or overnight).
  3. While marinating, prepare tzatziki sauce with desired ingredients.
  4. Heat oil in a skillet over medium-high heat; cook marinated chicken until browned and cooked through (about 8-10 minutes).
  5. In serving bowls, layer cooked orzo or rice followed by chicken and assorted toppings: cucumber, tomatoes, olives, feta cheese, red onion. Drizzle with tzatziki sauce.
