  • 2 tablespoons butter
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 2 teaspoons Italian seasoning
  • ½ cup flour
  • ¼ cup Parmesan cheese (finely shredded)
  • 4 cloves garlic (minced)
  • 1½ cups white wine (or chicken broth)
  • 1 cup half-and-half
  • 3 cups fresh spinach

Instructions

  1. Pound chicken breasts to an even thickness of about ½ inch.
  2. Mix salt, pepper, Italian seasoning, flour, and Parmesan cheese in a bowl. Coat chicken in the mixture.
  3. In a skillet over medium-high heat, melt butter and olive oil. Sear chicken for about 5 minutes on each side until golden brown; set aside.
  4. Deglaze the skillet with white wine (or broth), scraping up browned bits. Reduce the sauce by half and stir in minced garlic.
  5. Temper half-and-half by warming it slightly, then add it to the skillet while stirring continuously until smooth.
  6. Stir in fresh spinach until wilted, return chicken to the pan to heat through, then serve garnished with parsley.
