  • 2 cups shredded cheddar cheese (divided)
  • 1 can black beans (15 oz), rinsed and drained
  • 1 can corn (15 oz), drained
  • chili powder

  • onion powder
  • garlic powder
  • salt
  • black pepper

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a large mixing bowl, combine shredded chicken and enchilada sauce.
  3. Stir in cooked rice, black beans, corn, sour cream, and 1 cup cheddar cheese.
  4. Add chili powder, cumin, onion powder, garlic powder, salt, and pepper; mix well.
  5. Pour mixture into the greased baking dish and spread evenly.
  6. Top with remaining cheddar cheese.
  7. Bake for 20-30 minutes until cheese is melted and bubbly.
  8. Let sit for a few minutes before serving; garnish with fresh cilantro.
