  • 2 tablespoons olive oil
  • 1 yellow onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 1/4 pounds boneless skinless chicken breasts, thinly sliced
  • 1 1/2 teaspoons Italian seasoning
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup shredded provolone cheese

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the sliced peppers and onion, season with salt and pepper, and sauté until tender. Remove from skillet.
  2. In the same skillet, add remaining olive oil and chicken. Season with Italian seasoning and smoked paprika. Cook until browned on one side before stirring.
  3. Combine the sautéed vegetables back into the skillet with the chicken. Stir well to mix.
  4. Top with shredded provolone cheese and cover until melted. Serve hot.
