  • 2 large boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 large eggs, beaten
  • 2 cups panko breadcrumbs
  • 1 cup grated Parmesan cheese, divided
  • 1/4 cup olive oil
  • 1 large head Romaine lettuce, chopped
  • 1 cup croutons
  • 1/2 cup Caesar dressing (homemade or store-bought)
  • 4 large burrito-size flour tortillas

Instructions

  1. Slice chicken breasts in half to create cutlets and season with salt and pepper.
  2. Set up three shallow dishes for flour, beaten eggs, and panko mixed with Parmesan.
  3. Bread the chicken by dipping it into the flour, then the egg, and finally the panko mixture.
  4. Heat olive oil in a skillet over medium-high heat and cook chicken for 4–5 minutes on each side until golden brown.
  5. In a large bowl, toss chopped romaine, croutons, remaining Parmesan, and Caesar dressing until well combined.
  6. Slice cooked chicken cutlets into strips.
  7. Warm tortillas briefly in the microwave for easy rolling.
  8. Assemble wraps by placing dressed romaine and sliced chicken onto tortillas; fold and roll tightly.
