  • 1/2 cup (50 g) Dutch process cocoa powder
  • 1 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ginger

  • 1/4 teaspoon cloves
  • 3/4 cup (170 g) unsalted butter, room temperature
  • 1/2 cup (100 g) granulated sugar
  • 1/2 cup (100 g) dark brown sugar, packed
  • 1/3 cup dark molasses, not blackstrap
  • 1 large egg, room temperature
  • 1 teaspoon vanilla
  • 1/2 cup granulated sugar, for rolling
  • 4 ounces (115 g) chocolate, finely chopped
  • 1/3 cup heavy cream

Instructions

  1. Preheat your oven to 325°F and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, salt, ginger, cinnamon, and cloves.
  3. In a stand mixer, beat room temperature butter with granulated and dark brown sugars until creamy.
  4. Add molasses and mix well, then incorporate the egg and vanilla extract.
  5. Gradually mix in the dry ingredients until just combined.
  6. Shape dough into balls using a cookie scoop and roll in granulated sugar.
  7. Place on baking sheets spaced apart and bake for 10–11 minutes until puffy and cracked on top.
  8. Allow cooling on the baking sheet for 10 minutes before transferring to a wire rack.
