  • 1/4 teaspoon baking powder

  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves

Instructions

  1. Reduce the apple cider in a saucepan over medium heat until it thickens to about 1/4 cup; let cool.
  2. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  3. Cream the softened butter, granulated sugar, and brown sugar in a mixing bowl until light and fluffy.
  4. Beat in the egg and vanilla extract, then stir in the cooled apple cider.
  5. In another bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
  6. Gradually combine the dry ingredients into the wet mixture until just blended.
  7. Scoop tablespoon-sized portions onto prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes until edges are golden; let cool on sheets for five minutes before transferring to racks.
