  • ½ medium onion (diced)
  • 3 tbsp taco seasoning
  • ½ cup salsa
  • 15 oz can black beans (drained and rinsed)
  • 15 oz can sweet corn (undrained)
  • 10 oz can diced tomatoes and green chiles
  • 8.5 oz bag Ready Rice (prepared)
  • 4 oz Colby Jack cheese (shredded)

Instructions

  1. Heat a large oven-safe skillet over medium heat and spray with cooking oil.
  2. Add the ground beef and diced onion; cook until browned and onion is soft (8–10 minutes).
  3. Preheat the oven to Broil.
  4. Stir in taco seasoning and salsa until combined.
  5. Add black beans, corn, and tomatoes; simmer for about 6 minutes.
  6. Mix in prepared rice and top with shredded cheese.
  7. Broil until cheese is bubbly (about 1 minute). Serve hot.
