  • 12 ounces jumbo pasta shells
  • 1 pound fresh spicy sausage
  • 16 ounces pumpkin puree
  • 1/4 cup whole milk ricotta cheese
  • 1/2 cup Cabot Mac 'n Cheese shredded cheese
  • 1/2 cup Cabot Seriously Sharp cheddar cheese
  • 1/4 cup chopped broccolini
  • Ground nutmeg, sage, salt, and pepper

Instructions

  1. Preheat oven to 375°F (191°C). Prepare a 9×13-inch casserole dish.
  2. Cook pasta shells in boiling water for about 7 minutes; drain and cool in ice water.
  3. In a skillet, brown spicy sausage; add broccolini until softened. Set aside.
  4. Make pumpkin sauce by combining pumpkin puree, ricotta, nutmeg, and cheeses in the skillet until melted.
  5. Mix cooled sausage with half the sauce; stuff into pasta shells.
  6. Pour remaining sauce over stuffed shells; top with extra cheese.
  7. Bake for 15-20 minutes until bubbly. Serve warm.
