  • 1 pound lean ground beef
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 1 pound Russet potatoes (peeled and diced)
  • 4 cups chicken broth
  • 1/2 medium onion (chopped)
  • 2 ribs celery (chopped)
  • 2 medium carrots (chopped)
  • 1 tablespoon minced garlic (about 3 cloves)
  • 4 tablespoons butter
  • 1/3 cup all-purpose flour
  • 1 tablespoon yellow mustard
  • 1 tablespoon fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook bacon in a large pot over medium-high heat until crispy (about 10 minutes). Transfer to a paper towel-lined plate.
  2. Brown the ground beef in the same pot for 4-5 minutes; drain excess fat.
  3. Sauté chopped onion, celery, and carrots in melted butter for 4-5 minutes until softened.
  4. Add minced garlic and cook for another 30 seconds.
  5. Stir in flour until combined, then gradually whisk in chicken broth.
  6. Add heavy cream, diced potatoes, mustard, and cooked beef; bring to a boil.
  7. Reduce heat and simmer uncovered for 15 minutes until potatoes are tender.
  8. Remove from heat; stir in cheddar cheese and lemon juice. Season with salt and pepper before serving.
