  • 2 large eggs
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • 20 ounces cauliflower rice
  • 1/3 cup low sodium soy sauce
  • 1/4 cup oyster sauce
  • 1/2 cup frozen carrots
  • 1/2 cup frozen corn
  • 1/2 cup frozen peas

Instructions

  1. Scramble the eggs in a large skillet sprayed with vegetable oil over medium-high heat until cooked through. Remove and set aside.
  2. In the same skillet, heat sesame and vegetable oils over high heat. Add cauliflower rice and sauté for 4–5 minutes until slightly crispy.
  3. Pour in soy sauce and oyster sauce; mix well and cook for another 3–4 minutes until the rice is mostly dry.
  4. Stir in frozen carrots, corn, and peas; cook for about 2 minutes until warmed through.
  5. Add the scrambled eggs back into the skillet, mix everything together, and serve hot.
