  • 2 1/4 teaspoons instant yeast
  • 2 large eggs
  • 1/2 cup salted butter (melted)
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup granulated sugar
  • 1 1/2 cups finely shredded carrot
  • 3/4 cup shredded coconut
  • 4 1/2 cups bread flour (divided)
  • 6 ounces cream cheese (softened)
  • 2 cups powdered sugar

Instructions

  1. Prepare the yeast mixture by sprinkling instant yeast over warm milk in a stand mixer bowl.
  2. Combine eggs, melted butter, salt, cinnamon, and granulated sugar with the yeast mixture. Stir in shredded carrots and coconut.
  3. Mix in four cups of flour until just combined; let rest for five minutes.
  4. Knead dough using a dough hook, adding more flour if needed until smooth and elastic.
  5. Let the dough rise in an oiled bowl, covered for about thirty minutes.
  6. Prepare the filling by mixing softened butter, brown sugar, and cinnamon.
  7. Roll out dough into a rectangle. Spread filling over and roll tightly into a log.
  8. Cut into slices and arrange in a greased baking pan. Let rise again for twenty minutes.
  9. Pour warmed heavy cream over rolls before baking at 350°F for about thirty minutes.
  10. Cool slightly before frosting with cream cheese mixture.
