  • 180g stone-ground grits
  • 720ml water
  • 240ml whole milk
  • 450g large shrimp, peeled and deveined
  • 4 slices thick-cut bacon, diced
  • 1 small onion, finely chopped
  • 1 small bell pepper, diced
  • 60ml chicken broth or seafood stock
  • 60g sharp cheddar cheese, grated
  • 2 cloves garlic, minced

Instructions

  1. In a large saucepan, bring water, milk, and salt to boil. Gradually whisk in grits; reduce heat to low. Cover and simmer for 20–25 minutes, stirring frequently.
  2. While grits cook, season shrimp with salt and pepper; set aside.
  3. Cook bacon in a skillet over medium heat until crispy. Remove bacon but leave drippings.
  4. Sauté onion and bell pepper in the skillet until soft; add garlic and cook for another minute.
  5. Add seasoned shrimp to the skillet; cook until pink (about 1–2 minutes on each side).
  6. Pour chicken broth and lemon juice into the skillet to deglaze; return bacon to the mix and simmer briefly.
  7. Serve warm grits topped with shrimp mixture and garnish with green onions and parsley.
