  • 2 pounds beef roast (beef round or chuck steak)
  • 1 tablespoon adobo seasoning
  • 3 tablespoons vegetable oil
  • 1 small onion (chopped)
  • 1 green bell pepper (chopped)
  • ¼ cup sofrito
  • 4 cloves garlic (minced)
  • 8 ounces tomato sauce
  • ½ cup water
  • 1 pound potatoes (cut into bite-sized pieces)
  • 1 large carrot (peeled and cut into bite-sized pieces)

Instructions

  1. Cut beef into 1-inch cubes and season with adobo seasoning, salt, and pepper.
  2. Heat oil in a large pot over medium-high heat; sear beef until browned on all sides. Remove and set aside.
  3. In the same pot, sauté onion, green bell pepper, and sofrito for about 5 minutes.
  4. Add minced garlic and cook for another minute.
  5. Combine all ingredients, including seared beef, in the pot; stir well.
  6. Bring to a boil then reduce heat to low and simmer uncovered for 30 minutes.
  7. Add potatoes and carrots; cover and simmer for another 30 minutes or until beef is tender.
