  • 3/4 cup vodka (or water with fresh lemon juice)
  • 1 cup heavy cream
  • 1 tablespoon chili pepper paste
  • 16 ounces uncooked rigatoni
  • 3 tablespoons butter
  • 1/2 cup grated Parmesan-Reggiano cheese
  • Fresh basil leaves for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced onion and minced garlic; cook until soft (about 3–5 minutes). Stir in tomato paste and cook until caramelized (about 5 minutes).
  2. Reduce heat to low, add vodka, and simmer until most liquid evaporates. Mix in heavy cream and chili pepper paste; season with salt and pepper.
  3. Boil salted water in another pot, add rigatoni, and cook until al dente (about 10 minutes). Reserve 1 cup of pasta water before draining.
  4. Combine drained rigatoni with the sauce in the skillet; stir in butter and reserved pasta water until sauce is thick and glossy.
  5. Stir in Parmesan cheese, adjust seasoning if needed, and garnish with fresh basil before serving.
