  • 2 strips thick-cut bacon
  • 1/2 small shallot
  • 2 cloves garlic
  • 1 cup arborio rice
  • 1/4 cup dry white wine
  • 4 Tbsp caramelized onions
  • 1/3 cup parmesan-reggiano
  • 1 Tbsp unsalted butter
  • Chives (for garnish)
  • Salt and pepper to taste

Instructions

  1. Heat chicken broth in a medium saucepan over medium-low heat until simmering; keep warm.
  2. In a large sauté pan, cook bacon in olive oil over medium heat until crispy. Remove and drain on paper towels.
  3. Lower the heat; sauté shallots with a pinch of salt for 1-2 minutes until softened.
  4. Add minced garlic; cook for another minute before stirring in arborio rice to coat.
  5. Pour in white wine, allowing it to absorb for about 2-3 minutes.
  6. Gradually add warm broth one ladle at a time, stirring frequently until absorbed before adding more (20-25 minutes total).
  7. Once rice is al dente, mix in caramelized onions, bacon, parmesan-reggiano, and butter; season to taste and garnish with chives.
