  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup ricotta cheese
  • 1/4 cup powdered sugar
  • 1/4 teaspoon cinnamon
  • 1/2 cup mini chocolate chips
  • Additional granulated sugar and cinnamon for rolling

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt; set aside.
  3. In a large bowl, cream butter and sugar until fluffy. Beat in the egg and vanilla until combined.
  4. Gradually add dry ingredients to the wet mixture, mixing until just combined.
  5. In another bowl, combine ricotta cheese, powdered sugar, cinnamon, and mini chocolate chips for the filling.
  6. Roll dough into 1-inch balls and coat in cinnamon-sugar mixture.
  7. Place on the prepared baking sheet, flatten slightly, and bake for 10–12 minutes until edges are golden.
  8. Cool slightly on the baking sheet before transferring to a wire rack.
  9. Once cooled, spread ricotta filling on one cookie's flat side and sandwich with another.
