  • 1 lb. uncooked shrimp
  • 1 teaspoon Cajun seasoning
  • 1 red bell pepper (diced)
  • 3 tablespoons butter
  • 3 cloves garlic (minced)
  • 1½ cups chicken broth
  • ¾ cup heavy cream
  • 10 oz. Rotel diced tomatoes with green chilies
  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • 2 teaspoons hot sauce
  • ¾ cup cheddar jack cheese (shredded)
  • 2 teaspoons lime juice
  • 1 teaspoon brown sugar
  • ½ teaspoon mustard powder
  • ½ teaspoon oregano
  • 1 pinch cayenne pepper
  • 1 pinch red pepper flakes

Instructions

  1. Gather all ingredients and dice the red bell pepper and garlic.
  2. In a skillet over medium heat, add olive oil and sauté shrimp with Cajun seasoning until pink, about 3-4 minutes. Remove from skillet.
  3. In the same skillet, melt butter, then add garlic and cook until fragrant. Stir in flour to create a roux.
  4. Gradually whisk in chicken broth and heavy cream until smooth. Add honey, hot sauce, diced tomatoes, and remaining seasonings; simmer until thickened.
  5. Stir in cooked shrimp and lime juice; add cheese until melted. Serve immediately over rice or pasta.
