  • 2 large boneless skinless chicken breasts
  • 3 tablespoons flour
  • ¾ cup heavy cream
  • 1½ cups chicken broth
  • 1 tablespoon honey
  • 2 teaspoons Cajun seasoning (plus more for seasoning the chicken)
  • 3 tablespoons butter
  • 3 cloves garlic (minced)
  • 10 oz. Rotel diced tomatoes with green chilies
  • ¾ cup shredded cheddar jack cheese

Instructions

  1. Prepare all ingredients and season chicken breasts with Cajun seasoning.
  2. In a skillet, heat olive oil over medium heat; cook seasoned chicken for about 6–7 minutes on each side until golden brown. Remove from skillet.
  3. In the same skillet, melt butter, add minced garlic, and sauté until fragrant. Whisk in flour until lightly browned.
  4. Gradually add chicken broth and heavy cream, stirring in honey, Cajun seasoning, and spices.
  5. Return the cooked chicken to the skillet; simmer for five minutes. Add diced tomatoes and cheese until melted.
  6. Serve over rice or pasta; garnish with lime juice and fresh cilantro.
