  • 3 lbs red potatoes
  • 8 oz thick-cut bacon
  • ½ cup mayonnaise
  • ½ cup Caesar dressing
  • ¼ cup grated Parmesan cheese
  • 1 Tbsp white vinegar
  • 1 Tbsp Worcestershire sauce
  • 1 tsp celery salt
  • 2 celery stalks
  • ¾ cup minced red onions
  • 4 hard-boiled eggs
  • Fresh chives (for garnish)

Instructions

  1. Boil the potatoes in a large pot until fork-tender (about 10 minutes). Drain and set aside.
  2. In a skillet, cook the bacon until crisp; pat dry with paper towels.
  3. In a large bowl, mix the cooked bacon with mayonnaise, Caesar dressing, Parmesan cheese, vinegar, Worcestershire sauce, celery salt, sliced celery, and red onions.
  4. Gently fold in warm potatoes and chopped hard-boiled eggs.
  5. Cover and refrigerate for at least four hours before serving.
