  • 2/3 cup cooked, mashed butternut squash
  • 1/2 pound mezzi rigatoni (or any small pasta)
  • 1 1/4 cup shredded cheddar cheese
  • 3/4 cup shredded smoked gouda cheese
  • 1/2 cup shredded parmesan cheese
  • 1/4 cup unsalted butter
  • 1/4 cup flour
  • 2 cups milk
  • Salt, nutmeg, pepper, and Tabasco sauce

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In the same pot, melt butter over medium heat. Whisk in flour to create a roux for about 2 minutes.
  3. Gradually pour in milk while whisking until smooth. Add salt, nutmeg, pepper, and Tabasco sauce.
  4. Stir in cheddar, gouda, and parmesan cheeses until melted.
  5. Fold in butternut squash and combine with drained pasta.
  6. Transfer to a greased baking dish and bake at 350°F (175°C) for about 20 minutes until bubbly.
