  • 2 pounds butternut squash, peeled and cubed
  • 2 Honeycrisp apples, peeled and cubed
  • 1/2 pound sweet Italian sausage
  • 2 small fennel bulbs, thinly sliced
  • 1 onion, sliced
  • 1 cup grated Gruyere cheese
  • Olive oil
  • Salt
  • Black pepper
  • 2 tablespoons pure maple syrup, divided
  • 1/2 teaspoon ground dried sage
  • 1 1/2 teaspoons Herbes de Provence

Instructions

  1. Preheat your oven to 425°F. Line a baking sheet with foil.
  2. In a large bowl, combine the butternut squash and apples with olive oil, salt, pepper, maple syrup, sage, and Herbes de Provence.
  3. Spread the mixture on the baking sheet and roast for about 35 minutes until tender.
  4. Meanwhile, cook the sausage in a skillet until browned; remove from heat.
  5. Sauté fennel and onion in the same skillet until caramelized (about 10–12 minutes).
  6. Once vegetables are roasted, mix them with the sausage and remaining maple syrup in a bowl.
  7. Transfer to a baking dish, top with Gruyere cheese, and broil until golden (about 3-5 minutes).
  8. Garnish with fresh or fried sage leaves before serving.
