  • 1 large butternut squash (about 2 lbs), peeled and thinly sliced
  • 400ml (1¾ cups) double cream/whipping cream
  • 100g (1 cup) mature white Cheddar cheese, grated
  • 2 bay leaves
  • 1 garlic clove, crushed
  • Fresh thyme sprigs
  • Nutmeg (½ tsp)
  • 1 tbsp butter

Instructions

  1. Preheat the oven to 350°F (180°C). In a mixing bowl, heat the cream with nutmeg, garlic, thyme, and bay leaves until boiling. Let it infuse for 10-15 minutes.
  2. Layer half of the sliced butternut squash in a greased baking dish. Pour half of the infused cream over it. Repeat with another layer of squash and the remaining cream.
  3. Cover with foil and bake for 30 minutes until softened. Afterward, uncover and sprinkle cheese on top.
  4. Bake uncovered for an additional 20-30 minutes until the cheese is melted and golden brown.
