  • 2 cups cherry tomatoes, halved
  • ⅓ cup olive oil
  • 3 garlic cloves, thinly sliced
  • 1 teaspoon dried oregano
  • ½ teaspoon crushed red pepper flakes (optional)
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 8 slices artisan bread (ciabatta, sourdough, or baguette)
  • 8 ounces burrata cheese (2 balls or 1 large ball)
  • 1 cup fresh basil leaves
  • 4 tablespoons balsamic glaze
  • Olive oil or softened butter, for toasting
  • 4 slices prosciutto
  • 1 cup arugula
  • 2 tablespoons pesto

Instructions

  1. Preheat oven to 300°F (150°C). In a mixing bowl, toss halved cherry tomatoes with olive oil, garlic, oregano, crushed red pepper flakes, salt, and pepper. Spread on a baking sheet and roast for about 30 minutes until tender.
  2. While tomatoes roast, heat a skillet over medium heat. Brush each slice of artisan bread with olive oil or butter and toast until golden brown.
  3. Assemble the sandwiches by spreading pesto on one side of each toasted slice. Add burrata cheese on four slices, top with roasted tomatoes, fresh basil, prosciutto, and arugula before closing with another slice of bread.
  4. Slice sandwiches in half and drizzle with balsamic glaze before serving.
