Ingredients

Scale
  • 2 large boneless, skinless chicken breasts
  • ½ cup buffalo sauce
  • 2 cups cooked brown rice or quinoa
  • 1 cup corn kernels
  • 1 cup cherry tomatoes
  • 1 avocado
  • Shredded lettuce or mixed greens
  • Optional toppings: feta cheese, ranch dressing, lime juice

Instructions

  1. Season chicken breasts with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Heat a skillet over medium-high heat and cook the chicken for 6–8 minutes per side until fully cooked (internal temp of 165°F/74°C). Let it rest before slicing.
  2. Melt butter in the skillet (if using), add buffalo sauce, and toss the sliced chicken until well coated.
  3. Prepare your bowl base by cooking rice or quinoa according to package instructions and slicing the avocado and tomatoes.
  4. Assemble your bowl: start with grains at the bottom, add lettuce, corn, tomatoes, avocado, and finally top with buffalo chicken. Drizzle with your choice of dressing.
