  • 1 pound Brussels sprouts (washed, dried, and halved)
  • 8 slices thick-cut bacon (diced)
  • 1 cup Half & Half (or heavy whipping cream)
  • 2 tablespoons Dijon mustard
  • 1 cup finely grated Parmesan cheese (divided)
  • 3 cloves garlic (minced)
  • Salt and freshly ground black pepper (to taste)
  • Optional: ⅛ teaspoon nutmeg
  • Crushed red pepper flakes (for garnish)

Instructions

  1. Preheat oven to 400°F.
  2. Parboil halved Brussels sprouts in salted water for about 5 minutes; drain.
  3. In a cast iron skillet, cook diced bacon until crispy; reserve some grease.
  4. Sauté parboiled Brussels sprouts in the skillet for a minute.
  5. In a mixing bowl, whisk together Half & Half, Dijon mustard, half of the Parmesan cheese, garlic, salt, pepper, and nutmeg.
  6. Pour the cream sauce over the Brussels sprouts in the skillet and top with remaining Parmesan.
  7. Bake for 15-20 minutes until bubbly and golden brown. Allow to rest before serving with crushed red pepper flakes.
