Ingredients

Scale
  • 1 1/2 cups unsalted butter (melted)
  • 2 1/4 cups granulated sugar
  • 1 1/2 cups light brown sugar (packed)
  • 6 large eggs (room temperature)
  • 3 tbsp vegetable oil
  • 2 tbsp pure vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 1/2 cups cocoa powder
  • 1 1/2 tsps salt
  • 1.5 qts favorite ice cream flavor

Instructions

  1. Preheat the oven to 350°F. Grease two 8×8 inch baking pans and line with parchment paper.
  2. In a medium bowl, mix melted butter, granulated sugar, and brown sugar until well combined.
  3. Add eggs one at a time, mixing well after each addition.
  4. Stir in vegetable oil and vanilla extract until fully incorporated.
  5. In another bowl, whisk together flour, cocoa powder, and salt; gradually combine with wet ingredients until just mixed.
  6. Divide batter evenly between prepared pans and spread smoothly; bake for 30-40 minutes or until a toothpick comes out barely clean.
  7. Cool brownies in the pan for about 10 minutes before transferring to a cooling rack. Let cool completely.
  8. Thaw ice cream for easier spreading; layer softened ice cream on one brownie half in the pan and top with the second brownie half.
  9. Cover tightly and freeze for at least six hours or overnight before slicing into squares.
