  • 1/2 teaspoon cayenne pepper (optional)
  • 1 can (14 oz) coconut milk (400 ml)
  • 1 can (14 oz) diced tomatoes, drained (400 g)
  • 1 tablespoon lime juice
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Sauté the onion until translucent, about 3-4 minutes.
  3. Add garlic, cumin, paprika, and cayenne; cook for 1 minute until fragrant.
  4. Stir in chicken cubes; brown on all sides for about 5-7 minutes.
  5. Season with salt and pepper to taste.
  6. Pour in coconut milk; bring to a simmer.
  7. Stir in diced tomatoes and lime juice; reduce heat to low.
  8. Simmer gently for 15-20 minutes until chicken is cooked through and sauce thickens.
