1 lb ground beef (80/20 fat content)
1 cup breadcrumbs (fresh or Italian-style)
½ cup grated Parmesan cheese
1 cup dry red wine
3 cloves garlic, minced
1 medium onion, finely chopped
1 cup low-sodium beef broth
2 tbsp tomato paste
Olive oil for cooking
Instructions
Preheat oven to 375°F (190°C).
In a large mixing bowl, combine ground beef, breadcrumbs, Parmesan cheese, onion, garlic, salt, and pepper.
Form mixture into golf ball-sized meatballs and place on a parchment-lined baking sheet.
Heat olive oil in a skillet over medium heat and brown the meatballs on all sides for about five minutes. Remove from skillet.
In the same skillet, sauté onion until translucent; add garlic and tomato paste for one minute.
Pour in red wine and beef broth while scraping up browned bits from the skillet.
Return meatballs to the skillet, cover, and simmer for about 30 minutes.
