  • 1 package (1.75 oz) powdered fruit pectin

Instructions

  1. Prepare your peaches by peeling and chopping them into small, even pieces.
  2. In a heavy-bottomed pot, combine chopped peaches, sugar, lemon juice, bourbon, vanilla extract, and cinnamon (if using). Stir well.
  3. Bring the mixture to a boil over medium heat while stirring frequently to prevent sticking. Add powdered fruit pectin once boiling and stir until dissolved.
  4. Boil vigorously for about 10-15 minutes. To test consistency, place a spoonful on a cold plate; if it holds its shape after cooling slightly, it's ready.
  5. Ladle hot jam into sterilized canning jars, leaving about ¼ inch of headspace. Wipe rims before sealing with lids.
  6. For long-term storage at room temperature, process jars in a boiling water bath for about 10 minutes; otherwise, let cool completely before refrigerating.
