  • 2 lbs ground beef
  • 1 cup plain bread crumbs
  • ½ cup milk
  • 2 eggs
  • 1 cup onions (diced)
  • 1 cup bell pepper (diced)
  • 1 jalapeño (diced)
  • 1 cup apricot jam
  • ½ cup bourbon
  • ½ cup BBQ sauce
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 tbsp all purpose seasoning (Tony's brand)
  • 2 tbsp Worcestershire sauce
  • ¼ tsp salt and pepper
  • ¼ cup dark brown sugar
  • 1 tbsp sriracha
  • ¼ cup water

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large mixing bowl, combine ground beef, bread crumbs, milk, eggs, diced onions, bell pepper, jalapeño, onion powder, garlic powder, Worcestershire sauce, salt, and pepper.
  3. Mix until just combined and transfer to a baking dish; shape into a loaf.
  4. For the glaze, mix apricot jam, bourbon, BBQ sauce, dark brown sugar, sriracha, and water in another bowl.
  5. Pour half the glaze over the meatloaf and reserve the rest.
  6. Bake for about 75 minutes or until cooked through.
  7. Let rest before slicing and drizzle with remaining glaze.
