  • 34 tablespoons ice water
  • 1/2 teaspoon vanilla extract
  • 1 egg (lightly beaten)
  • 4 tablespoons unsalted butter
  • 3/4 cup dark brown sugar (packed)
  • 2 1/2 cups heavy whipping cream
  • 1 cup whole milk
  • 2 tablespoons bourbon or Scotch
  • 1/2 teaspoon kosher salt
  • 6 large egg yolks
  • 1/4 cup cornstarch
  • 3 tablespoons sugar
  • 2 teaspoons vanilla bean paste (or vanilla extract)
  • 1 teaspoon unflavored gelatin
  • 4 teaspoons cold water
  • 1 cup heavy whipping cream (cold)
  • 2 tablespoons powdered sugar
  • 1 tablespoon unsulphered molasses (I like Brer Rabbit, mild flavor)
  • (Optional) butterscotch chips or shavings

Instructions

  1. Prepare the pie crust by mixing flour, sugar, salt, and cold butter until crumbly. Add ice water and vanilla until the dough comes together. Chill for 30 minutes.
  2. Roll out and pre-bake the crust in a pie pan at 400°F for about 25 minutes.
  3. For the filling, melt butter and brown sugar in a saucepan until bubbly. Gradually whisk in cream mixture and egg yolks combined with cornstarch and sugar. Cook until thickened.
  4. Pour the filling into the cooled crust and refrigerate for at least three hours.
  5. Prepare whipped cream by blooming gelatin, whipping cream with sugar, and adding molasses. Top chilled pie before serving.
