  • 10g granulated sugar
  • 50g all-purpose or bread flour
  • 25g water
  • 90g levain
  • 220g whole milk
  • 55g unsalted butter
  • 60g granulated sugar
  • 6g lemon zest
  • 1 large egg
  • 6g salt
  • 475g bread flour
  • 190g fresh or frozen blueberries
  • 50g granulated sugar
  • 15g lemon juice
  • 10g cornstarch
  • 55g unsalted butter
  • 30g cream cheese
  • 125g powdered sugar
  • 15g lemon juice
  • 24g lemon zest
  • pinch of salt

Instructions

  1. In a bowl, mix sourdough starter, sugar, flour, and water until combined.
  2. Add levain and warmed milk; stir until blended.
  3. Incorporate melted butter, sugar, lemon zest, egg, salt, and bread flour; mix well.
  4. Knead the dough on a floured surface for 8-10 minutes until smooth.
  5. Place in a greased bowl to rise for about an hour until doubled in size.
  6. Prepare blueberry filling by cooking blueberries with sugar and lemon juice until thickened; cool.
  7. Roll out the dough into a rectangle, spread with blueberry filling, roll tightly, and slice into pieces.
  8. Let rolls rise again for about an hour on a baking sheet lined with parchment paper.
  9. Bake at 350°F (175°C) for about 30 minutes until golden brown.
  10. Mix icing ingredients and drizzle over cooled rolls.
