  • 100 g active sourdough starter
  • 500 g bread flour
  • 355 g room temperature water (335g + 20g)
  • 100 g fresh blueberries
  • Zest of one lemon
  • 10 g salt

Instructions

  1. Feed your sourdough starter 6-10 hours prior to baking.
  2. In a mixing bowl, combine the starter, 335g water, and bread flour until incorporated.
  3. Cover and let rest for 20-30 minutes (autolyse).
  4. Add salt and remaining water; knead for 1-2 minutes until mixed.
  5. Let the dough rest for 30 minutes; then incorporate blueberries and lemon zest with stretch and fold method.
  6. Repeat stretching and folding every 30-40 minutes for several hours.
  7. Shape the dough and place it in a proofing basket; allow it to rise for about 2 hours or refrigerate up to 72 hours.
  8. Preheat the oven to 500°F (260°C) about 30 minutes before baking; score the top of the loaf.
  9. Bake covered for 20 minutes; then lower the temperature to 400°F (200°C) and bake uncovered for another 30-35 minutes.
  10. Cool on a rack for at least 1-2 hours before slicing.
