  • 100 g active starter
  • 500 g bread flour
  • 355 g room temperature water
  • 100 g fresh blueberries
  • Zest of one lemon
  • 10 g salt

Instructions

  1. Feed your starter 6-10 hours before making the dough.
  2. In a large bowl, mix 335g of water, the starter, and bread flour until combined.
  3. Cover and let rest for 20-30 minutes to hydrate the flour.
  4. Add salt and the remaining 20g of water; knead lightly for 1-2 minutes.
  5. Allow bulk fermentation at room temperature for about 30 minutes, then add blueberries and lemon zest. Stretch and fold the dough every 30-40 minutes for about 1 to 1.5 hours.
  6. Shape the dough into a ball or loaf and place in a proofing basket to rise for about 2 hours at room temperature or refrigerate up to 72 hours.
  7. Preheat your oven (and Dutch oven if using) for 30 minutes before scoring the bread.
  8. Score the dough and bake at 500°F (260°C) covered for 20 minutes, then reduce heat to 400°F (200°C) uncovered for an additional 30-35 minutes until dark brown.
  9. Cool on a rack for at least 1-2 hours before slicing.
