  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 2/3 cup butter (cold, cubed)
  • Grated zest from 1 lemon (optional)
  • ⅓ cup light brown sugar
  • ⅓ cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 8 oz. mascarpone cheese
  • 8 oz. cream cheese (softened)
  • ½ cup + 2 tablespoons caster sugar
  • 2 tablespoons corn starch
  • 1 and 2/3 cups blueberries
  • ½ cup powdered sugar
  • 23 teaspoons milk

Instructions

  1. Preheat your oven to 350°F and prepare a 9-inch springform pan with parchment paper and nonstick spray.
  2. In a large bowl, combine flour, baking powder, salt, brown sugar, sugar, and lemon zest (if using). Add cold butter cubes and mix until crumbly.
  3. Mix in eggs and vanilla extract until just combined; press two-thirds of the mixture into the prepared pan for the crust.
  4. In another bowl, mix mascarpone, cream cheese, caster sugar, corn starch, and eggs until smooth.
  5. Layer half of the cheesecake mixture over the crust, top with blueberries, add remaining cheesecake mixture, more blueberries, and finish with crumbs.
  6. Bake for 65-75 minutes until golden brown; check doneness with a toothpick.
  7. Prepare a glaze by mixing powdered sugar with milk to desired consistency.
