  • 2 tablespoons cornstarch mixed with 2 tablespoons water
  • 1 tablespoon lemon juice
  • 1 1/2 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Fresh blackberries for decoration
  • Edible flowers for decoration
  • Dark chocolate shavings for decoration
  • Cocoa powder dusting for decoration

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare two round cake pans.
  2. Mix dry ingredients (flour, sugar, cocoa powder, baking powder, baking soda, salt) in one bowl. Combine wet ingredients (eggs, oil, buttermilk, vanilla) in another.
  3. Combine the wet and dry mixtures until just mixed; stir in hot water until smooth.
  4. Pour batter into prepared pans and bake for 30–35 minutes. Cool completely.
  5. For the filling: Cook blackberries with sugar until juices release; add cornstarch mix and lemon juice until thickened; cool fully.
  6. Whip heavy cream with powdered sugar until stiff peaks form.
  7. Assemble the cake by layering: spread blackberry filling between cake layers and top with whipped cream.
