  • 8 oz flank steak, thinly sliced
  • 8 oz fresh Hong Kong pan fry noodles
  • 1 cup low-sodium beef broth
  • 2 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 4 heads baby bok choy
  • 4 cloves garlic, minced
  • 1 inch ginger, minced
  • Peanut oil for frying

Instructions

  1. Marinate the beef with Shaoxing wine, cornstarch, and salt in a bowl.
  2. In another bowl, combine the sauce ingredients: beef broth, soy sauce, oyster sauce, cornstarch, sugar, Chinkiang vinegar, and white pepper.
  3. Cook the noodles as per package instructions; drain and set aside.
  4. Heat peanut oil in a skillet and crisp the drained noodles on both sides until golden brown; set aside.
  5. Cook marinated beef in the same skillet until browned; remove from pan.
  6. Sauté onions and carrots for a few minutes before adding garlic and ginger.
  7. Add bok choy until softened then pour in the prepared sauce to thicken.
  8. Return the beef to the pan and mix well before serving over crispy noodles.
