  • 2 lbs beef chuck
  • 2 tbsp olive oil or ghee
  • 1 large yellow onion
  • 3 cloves garlic
  • 1 tbsp fresh ginger
  • 3 large carrots
  • 2 tbsp curry powder
  • 1 can crushed tomatoes
  • 2 cups beef broth
  • 1/2 cup coconut milk
  • Salt and pepper to taste
  • 4 small round bread loaves

Instructions

  1. Heat olive oil or ghee in a large pot over medium-high heat. Sear cubed beef until browned, then remove from pot.
  2. Sauté chopped onions until translucent; add garlic and ginger until fragrant.
  3. Stir in carrots and spices; return beef to pot.
  4. Add crushed tomatoes, beef broth, and coconut milk; season with salt and pepper.
  5. Bring to boil, then reduce heat and simmer for about 1.5 hours until beef is tender.
  6. Preheat oven to 350°F (175°C). Hollow out the bread loaves.
  7. Ladle hot curry into each bread bowl and serve warm.
