Ingredients

  • Chuck roast
  • Dried guajillo peppers
  • Dried ancho peppers
  • Garlic cloves
  • Onion
  • Cinnamon stick
  • Bay leaves
  • Fresh cilantro
  • Lime juice

Instructions

  1. Prepare the Marinade: Simmer dried guajillo and ancho peppers in water until soft. Remove from heat.
  2. Blend Ingredients: Combine softened peppers, garlic, onion, cinnamon stick, bay leaves, salt, and pepper in a blender until smooth.
  3. Marinate the Meat: Coat chuck roast with the marinade and refrigerate for at least 2 hours or overnight.
  4. Slow Cook the Meat: Place marinated meat in a slow cooker with remaining marinade and enough water to cover halfway; cook on low for 8 hours.
