  • 12 lbs. fresh salmon
  • 2 tablespoons brown sugar
  • 2 teaspoons smoked paprika
  • 2 teaspoons onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon kosher salt
  • 2 tablespoons olive oil
  • 2 mangoes, diced
  • 1 avocado, diced
  • 1/4 cup minced cilantro
  • 1/4 cup minced red onion
  • 1/2 jalapeño, minced (optional, to taste)
  • 1 teaspoon honey
  • 2 tablespoons lime juice
  • 1 teaspoon lime zest
  • Salt to taste
  • 1 1/2 cups of rice

Instructions

  1. Prepare the mango avocado salsa by mixing mangoes, avocado, cilantro, red onion, jalapeño (if using), honey, lime juice, lime zest, and salt in a bowl. Set aside.
  2. Cook rice according to package instructions.
  3. Preheat oven to 475°F. For a crispy finish, set to broil at 500°F.
  4. Mix brown sugar, smoked paprika, onion powder, garlic powder, chili powder, kosher salt, and olive oil in a bowl. Rub the mixture onto the salmon fillet.
  5. Place salmon skin-side down on a lined baking sheet and bake for 6–12 minutes until cooked through.
  6. Assemble your bowls by placing rice at the base and topping it with BBQ salmon and salsa.
