  • 1 cup buttermilk
  • ¾ cup all-purpose flour
  • 2 cups panko breadcrumbs
  • 1 cup mayonnaise
  • ½ cup Thai sweet chili sauce
  • 1 teaspoon Sriracha (or to taste)
  • Canola oil (for frying)

Instructions

  1. Prepare the bang bang sauce by whisking together mayonnaise, Thai sweet chili sauce, Sriracha, and honey until smooth.
  2. Marinate chicken in buttermilk for at least 10 minutes to enhance flavor and moisture.
  3. Set up a breading station with flour mixed with spices in one dish, beaten egg with Sriracha in another, and panko breadcrumbs in the third.
  4. Coat each chicken tenderloin first in the flour mixture, then dip into the egg mixture, and finally coat with panko breadcrumbs.
  5. Heat canola oil to 350°F (175°C) in a deep fryer or large pot. Fry the chicken in batches until golden brown and cooked through (about 6 minutes per batch).
  6. Drain on paper towels and drizzle with bang bang sauce before serving.
