  • 16 oz Challah bread (cut into 1-inch cubes)
  • 4 cups milk
  • 5 eggs
  • ½ cup sugar
  • ½ cup butter
  • 1½ cups brown sugar (packed)
  • 3 ripe bananas (sliced)

Instructions

  1. In a large bowl, whisk together eggs, milk, sugar, cinnamon, and vanilla until well blended.
  2. Add the bread cubes and gently stir to coat. Cover and refrigerate for 1 hour to soak.
  3. Preheat the oven to 350°F (175°C) and spray an 11 x 7 inch baking dish with non-stick spray.
  4. Pour the soaked mixture into the baking dish and bake covered with foil for about 55-60 minutes or until set.
  5. While baking, melt butter in a skillet over medium heat; add brown sugar, spices, and cook until dissolved.
  6. Stir in heavy cream and sliced bananas; gently fold until combined.
  7. Once baked, pour the warm sauce over the pudding and serve immediately.
