  • 1/2 cup unsalted butter (cold, cut into pieces)
  • 2 ripe bananas (about 1 cup mashed)
  • 1 egg (lightly beaten)
  • 1 tbsp water
  • 2 tbsp sugar
  • 1/4 tsp cinnamon (for topping)
  • 1/2 cup confectioner's sugar (for glaze)
  • 2 tbsp brown sugar (for glaze)
  • 1/2 tsp vanilla extract (for glaze)
  • 23 tsp milk (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flours, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in the mashed bananas and beaten egg until just combined.
  5. Turn the dough onto a floured surface; knead gently until it comes together.
  6. Shape into an 8-inch circle; brush with water and sprinkle with cinnamon sugar.
  7. Cut into 8 pieces and bake for 15–18 minutes until golden brown.
  8. Prepare the glaze by whisking confectioner's sugar, brown sugar, vanilla extract, and milk; drizzle over cooled scones.
