  • 2 to 3 ripe bananas (sliced)
  • 1 large egg
  • 1/4 cup granulated sugar
  • 1/4 cup canola oil
  • 1/4 cup sour cream
  • 2 teaspoons vanilla extract
  • 1 cup mashed ripe bananas
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F. Line an 8×8-inch pan with foil and spray with cooking spray.
  2. In a mixing bowl, melt the butter and combine with brown sugar and granulated sugar until smooth.
  3. Add the egg, sour cream, oil, and vanilla extract; mix until well combined.
  4. Stir in the mashed bananas.
