  • 1 lb sirloin steak
  • 4 oz Gorgonzola cheese, crumbled
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 6 cups mixed spring greens
  • 1 corn on the cob
  • Balsamic vinaigrette (3 tbsp balsamic vinegar, ½ cup olive oil)
  • Fresh herbs for gremolata (basil, parsley)

Instructions

  1. Marinate the steak by combining balsamic vinegar, Worcestershire sauce, olive oil, Dijon mustard, garlic powder, salt, and pepper in a bowl. Place the steak in a ziplock bag with the marinade and refrigerate for at least 30 minutes.
  2. Prepare gremolata by mixing minced basil, parsley, lemon zest, and garlic in a small bowl.
  3. Grill the corn on medium-high heat until tender and charred (about 10 minutes). Let cool before slicing off kernels.
  4. Grill the marinated steak for about 4–5 minutes per side for medium-rare. Allow to rest before slicing.
  5. Whisk together vinaigrette ingredients. Toss mixed greens with half of the vinaigrette and gremolata in a large bowl.
  6. Top salad with sliced steak, grilled corn kernels, cherry tomatoes, red onion, and Gorgonzola. Drizzle remaining dressing over the top before serving.
