  • 2 large baking potatoes
  • 2 tbsp olive oil
  • 1 block (200g) feta cheese
  • 1 head of garlic
  • Fresh basil (for serving)
  • Lemon (for seasoning)
  • Dried herbs: thyme
  • Dried herbs: oregano
  • Dried herbs: red chili flakes

Instructions

  1. Preheat your oven to 200C | 390F.
  2. Wash and cube the baking potatoes. Par-boil in a saucepan for 6-8 minutes. Drain and let steam dry.
  3. Toss the par-boiled potatoes with olive oil, thyme, oregano, salt, pepper, and red chili flakes in a baking dish. Roast for 30-40 minutes until golden.
  4. Place the feta block and cut garlic head in the center of the dish; squeeze half a lemon over them.
  5. Return to the oven for another 15 minutes until bubbly.
  6. Squeeze out roasted garlic cloves and mix them with the potatoes along with remaining lemon juice and fresh basil.
  7. Drizzle honey over the top before serving.
