Baked Feta Potatoes are a delicious twist on a classic side dish, combining crispy roasted potatoes with creamy baked feta cheese infused with garlic and herbs. Inspired by the viral baked feta pasta trend, this recipe is perfect for family dinners or festive gatherings.   • 2 large baking potatoes
  • 200g block of feta cheese
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 head of garlic (top cut off)
  • 1 lemon (halved)
  • Honey (for drizzling)
  • Fresh basil (for garnish)

Instructions

  1. Preheat your oven to 200C | 390F.
  2. Wash and cube the potatoes, then par-boil them in salted water for 6-8 minutes. Drain and let steam dry.
  3. In a baking dish, combine the par-boiled potatoes with olive oil, thyme, oregano, salt, and pepper. Stir to coat.
  4. Wrap the garlic head in foil and add it to the baking dish.
  5. Roast everything for 30-40 minutes until golden brown.
  6. Add the feta cheese to the center of the dish, sprinkle with seasonings, and squeeze half a lemon over it before returning to the oven for another 15 minutes.
  7. Once done, mash the roasted garlic into a bowl and mix it with lemon juice. Stir this mixture into the potatoes along with fresh basil.
  8. Drizzle honey over the dish, garnish with basil and chili flakes, then serve hot.
