1/2 cup butter (softened)
2/3 cup granulated sugar
2 eggs (room temperature)
1 1/2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1 3/4 teaspoons baking powder
1/2 cup milk or almond milk (room temperature)
2 large apples (peeled and chopped)
1/3 cup light brown sugar
1 teaspoon ground cinnamon
Instructions
Preheat the oven to 350°F and prepare a 9×5-inch loaf pan.
In a small bowl, mix together light brown sugar and ground cinnamon.
In a large bowl, cream softened butter, granulated sugar, and brown sugar until fluffy. Add eggs one at a time, then stir in vanilla.
In another bowl, whisk flour and baking powder; gradually combine with wet ingredients while alternating with milk.
Fold in the chopped apples.
Layer half the batter in the pan, sprinkle half the cinnamon mixture on top, add remaining batter, then finish with the rest of the cinnamon mixture.
Bake for about 55 minutes or until a toothpick comes out clean. Cool before glazing with a mixture of powdered sugar and milk.
