  • 3 pounds boneless skinless chicken breast halves
  • 3 tablespoons olive oil
  • 2 tablespoons plus 2 teaspoons chili powder
  • 3 tablespoons cumin
  • 3 cups chopped onion
  • 3 tablespoons minced garlic
  • 3 (15-ounce) cans white beans
  • 2 (4-ounce) cans chopped green chiles
  • 46 cups low-salt chicken broth
  • 6 cups shredded cheese (Monterey Jack and cheddar)
  • 2 cups sour cream

Instructions

  1. Preheat oven to 350°F. Spread chicken in a roasting pan, drizzle with olive oil, season, and roast for about 30 minutes until cooked through. Shred chicken.
  2. In a large pot, heat remaining olive oil; sauté onions and garlic until tender.
  3. Add beans, shredded chicken, green chiles, oregano, and spices. Pour in broth and simmer for about 20 minutes.
  4. Stir in cheese and sour cream until melted. Simmer gently for another 15–20 minutes.
